So 10 years ago, while studying for my business degree, my class had a potluck once a month to kind of get away from all the madness we were buried in each day. At these potlucks, a woman named Joanna would bring in lumpia that she and her daughter sat and wrapped all night and would then bring them frozen along with her deep fryer and make a fresh batch of lumpia before our tummies!!! It was such a hit, people from other classes would stop by for a couple, although they were pretending they were coming in for different reasons. Well I just had to have my own at home and my family and friends love them so much that I'm going to share my recipe with you. ENJOY!!!

Makes 30 lumpia

Ingredients:

  • Vegetable oil (for the deep fryer)
  • 1 egg  (stir in bowl and set aside)
  • 1 package of lumpia wrappers THAWED (found in produce section at grocery stores)
  • 1/2 of a medium size onion ( I prefer red, dice up into small pcs, I use my mini chopper)
  • 2 cups of coleslaw
  • 2 cloves of garlic (buy a bulb and take 2 pcs off and crush them, I use my mini chopper)
  • 1lb of ground pork (uncooked)
  • 1lb of ground beef (uncooked)
  • 2 tsp soy sauce


Directions:

1. Preheat deep fryer to 350.
2. In a large bowl, mix together all ingredients coded in blue above until well blended.
3. On large plate, use 1 lumpia wrapper and lay flat like a diamond shape.
4. Scoop a tablespoon of mixture in the middle of the wrap.
5. Fold bottom point up and over the mixture, then the same with both sides one by one.
6. Dip egg mixture on brush or fingers to dampen the remaining point of the wrapper.
7. Roll remaining point up gently but tightly to complete the roll.
8. Continue until all lumpias are wrapped.
9. In deep fryer, set 4-5 lumpias in for 5 minutes. (No turning)
10. Continue until all lumpias are cooked.

I usually use soy sauce for dipping but my husband likes sweet and sour sauce.
